Perfect Festive Carrot Cake

We think this cake is perfect so we just went ahead and called it that. Ginger and all the lovely spices spiced carrot and toasted walnut super moist sponge slab, topped with mascarpone icing, crunchy lotus icing, and more toasted walnuts. It's like an autumnal hug with each bite. 

Cake serves up to 36 bite-sized pieces or 16 to 20 larger portions.
